Description
The plot is on a hillside beside the village of Préhy and contains kimmeridgian soil of exceptionally high quality, with very fine minerals. The alternate layers of limestone and clay contain many fossils, which appear on the ground.
A biodynamic vineyard : Cultivation is carried out in harmony with the rhythms of nature and planetary cycle. This organic vine growing is a real return to the traditions of our forefathers. In addition to organic compost, the vineyard is sown with beneficial plants to physically improve the soil and attract useful insects. This also creates competition for the vine, thus preventing overproduction.
2008 Vintage : Golden green colour, with silvery green highlights. The nose mixes freshness, density and complexity. It reveals aniseed, mentholated notes, in the aromas of crystallized citrus fruits (clementine, orange, lemon), which, after aeration, evolve on notes of vanilla almonds, slightly grilled. The mouth has a strong personality, allying energy, minéralité, beautiful salinity and tension, with aromas slightly flint. Finale of mouth is crunchy and thirst-quenching.
Wine-making : Pneumatic press. Natural yeast. One part of temperature controlled alcoholic fermentation and ageing is in stainless steel, other part in foudre (big oak containing 100 hl). Malolactic fermentation completed. Ageing on lees.
